Volunteer Party a Great Success!

On Tuesday, March 11, the Land Trust thanked our volunteers for their hard work and dedication in 2006 and 2007 and kicked off a great year of volunteering in 2008! Thank you to each and every one of you who have volunteered your time over the past year.

We had a great evening overlooking the beautiful 17-acre nature area next to Glencoe Hill Apartments. This nature area which will remain beautiful forever, now that McKinley Properties has donated a permanent conservation agreement to the Washtenaw Land Trust to protect this land. Thank you to Arbor Farms Market for their sponsorship of this event.

Land Trust event!Tuesday March 25, 7-9 p.m. - Join the Green Team: Become a Volunteer Ambassador! You can help protect nature and open spaces, simply by spreading the word about the Land Trust. If more people know about what we're all doing to protect local lands, then more land can be saved! At this training, you'll learn how to talk to people at local community events about land protection. It's easy and it's fun - we'll teach you everything you need to know!

Michigan-Inspired Recipes

Thank you to Megan Hanner for these recipes - and for preparing these tasty dishes for the party!

Black Bean and Corn Salsa
  2 15-ounce cans black beans, rinsed and drained (southwestern flavored black beans with cumin and other spices are best, or season to taste)
  1 lb corn kernels, cut off the cob (or 1 17-ounce package frozen whole kernel corn, thawed)
  2 large tomatoes, seeded and diced  (or cans of diced tomatoes)
  1-2 large avocado, peeled and diced
  1 small onion, diced
  4 tablespoons lime juice (about 1 lime)
  Garlic to taste (fresh is best!)
  2 tablespoon red wine vinegar
  Salt and pepper to taste

  Mix all ingredients in a large bowl and serve with tortilla chips.

  (Ann Arbor Tortilla Factory chips are delicious with this-- and made locally! They are available at Arbor Farms Market and other stores.)

Onion Roasted Potatoes (to feed 8)
  4 pounds potatoes
  1/3 cup oil (olive oil recommended)
  1 pack of onion soup mix
  Garlic powder/ soy sauce to taste

  Cut potatoes into bite-sized pieces. Mix ingredients in a large roasting pan. Cook at 425 for 35 minutes, stirring occasionally.

Michigan ranks 9th in the nation in onion production, growing more than 94.5 million pounds of onions in 2000.

Asparagus roll ups
  Thinly sliced ham
  Fresh Asparagus
  Cream Cheese (one 6 oz package of cream cheese can be used for about 15 slices of ham)

  Chop the thick ends off of the asparagus.  Blanch the asparagus by covering them with water, bringing them to a boil, and then immediately placing them in cold water. Spread cream cheese on each slice of ham.  Place two asparagus stalks on each piece of ham and roll.  Cut into thirds to serve.

Michigan asparagus, unlike other states, is hand-snapped above the ground, resulting in a more tender and flavorful veggie.

Berry Cream Punch
  Old Orchard pomegranate-blueberry juice
  Faygo cream soda
  Blueberries to float
  Berry sherbet

  Chill all ingredients.  Mix together and serve.
